Black Bean Dip

You will need a food processor for this recipe.  You can get away with using a potato masher if you need to, but it will be difficult.

Ingredients

A can or 2 of black beans (use 2 if you want a lot, 1 if you only want a little)
A small onion, diced
some Orange Juice
some Salsa
A sprinkle of Cumin
A smaller sprinkle of Coriander
Garlic to taste

Directions

Saute your diced onion and garlic in a pan with a bit of spray or olive oil, until onion is translucent.

Drain and rinse your beans.  (some people like to use the liquid from the can.  Personally, this doesn’t work for me.)  Place them in your food processor with your sauteed onions.

Add a tablespoon or 2 of salsa (to your taste), some cumin and a bit of coriander.  Add some orange juice (a little at a time), while pulsing your food processor, to help achieve a smooth but thick texture.   You will need to taste it, to see if you want more orange juice (you can use a bit of lime juice if you prefer, with water), or more spices.

I like this served warm (heat in microwave or on stove in a pan) with chips.  Yum.
